This coffee comes from a farm called Sopa’s Estate at Omkoi, Chiangmai Thailand. The farm is very healthy and beautiful. The farm has a fertile soil and a good altitude, which is perfect for growing quality coffee. The coffee plants are grown on slopes and under towering trees so they receive a good amount of sunshines and a right amount of shades, keeping the forest healthy and making the coffee plants to produce beautiful coffee cherries with high quality. 

The coffee cherries are handpicked only when they are fully ripe. The cherries are then processed using the fully washed method: the cherries are pulped then fermented for numbers of hours depending on the weather conditions. The coffee is then washed in clean, fresh water to remove all traces of mucilage, and then sun dried on tables resulting in a well balanced cup with notes of vanilla, hazelnut and chocolate with a hint of persimmon fruit.
