This coffee comes from a farm, owned by Boonserm and his wife, near a village called Khun Lao of Northern Thailand. The farm is very healthy and beautiful with approximately 3,000 coffee plants. The coffee plants are grown on slopes and under towering trees so they receive the great morning sunshines and the right amount of shades, keeping the forest healthy and making the coffee plants to produce beautiful coffee cherries with high quality.
Great care was taken in selecting the variety and the fully ripe cherries. The coffee cherries are fully washed and sun dried on tables resulting in a citrusy cup with notes of lemon and sweetness of sugarcane molasses.
Currently, Ceresia Coffee Roasters and Thai High Ventures are working together with Boonserm through educating and sharing knowledge especially on the value of Red Ripe Cherry; giving suggestions and recommendations on how to improve on the coffee processing to enhance the quality, the flavors and the characteristics of the final cup.
